About Heritage Revival
So much of what we eat today is heavily processed for the sake of conformity and mass production, that its original essence is completely lost in the process. Heritage Revival cooking represents the traditions and techniques developed in the kitchen that were once standard practice to bring that very essence back.
Before refrigeration we used smoking, curing, pickling and fermenting as means of preserving our food. Those products were then preserved and used to sustain our family. These are the very techniques that I have found myself passionate about and want to bring back to the home kitchen.
I prefer to add layers of complexity to my dishes using traditional practices such as fermenting; an underappreciated technique. When we ferment food, it adds layers of complexity that cannot be achieved with overly processed ingredients. Our culture has begun to appreciate more traditional techniques and we’ve absorbed the use of many ingredients from various cultures. Kombucha, kimchi, and ginger beer are all great examples of how fermentation is used today. These techniques not only help us add complexity to our dishes, it is also benefiting our health. With Heritage Revival I hope to impart these techniques into the kitchen in a way that is palatable for all families and can be done regardless of time and ability.
